Rebuilding the American Table with Phil Jones and Jane Black at the JBF Food Conference

 

One of the most compelling conversations at our recent JBF Food Conference was "Rebuilding the American Table: Bridging the Good Food, Fair Food, and Hunger Movements" with journalist Jane Black and chef Phil Jones. Also the general manager of COLORS Detroit, Jones works to provide job training to unemployed community residents to equip them with the life skills and work experience they need to pursue careers in the hospitality and food service industry. Taste America Local Dish Challenge: Final Standings Update!

The James Beard Foundation's Taste America® Local Dish Challenge

Here's a final update on the standings for James Beard Foundation's Taste America® Local Dish Challenge! Chicago still leads, but only by a slim margin. With two days left in the contest, any of the leading cities could still win this one.

 

If you're late to the game, here's your last refresher: order a "Taste America Local Dish" at one of the contest's participating restaurants, snap it on your phone and upload it to Instagram, tagging your image with #JBFTasteAmerica and the suggested hashtag for your city. After the promotion ends on October 31, the city with the most uploads will receive $10,000 or 10 percent of funds raised nationally, whichever amount is higher, in the form of a donation to a local food charity.

The Consequences of Appetite with Raj Patel at the JBF Food Conference

 

On day two of our recent JBF Food Conference, activist and Stuffed and Starved author Raj Patel delivered a fascinating keynote address on the consequences of appetite (shown in the video above). Afterwards, he and Jeff Dunn, former Coca-Cola executive and current president and CEO of Bolthouse Farms, had a conversation entitled "Changing Courses: Satisfying our Appetites for Quick, Convenient and Cheap(er)." London-based author and architect Carolyn Steel, known for using food as a medium to "read" cities and understand how they work, joined us at our recent JBF Food Conference to talk about appetite and the underlying issues within our urban ecosystem. 10 Ways to Cook Kale Without Making Kale Salad

Though it's hard to remember, there was a time when few of us had heard of kale salad. Back in those gastronomically prehistoric days, kale was, in fact, occasionally consumed in cooked form. And it was still delicious. If you've maxed out on raw greens, here are some alternative ways to prepare this celebrated superfood:

 

1. Serve it Greek-style: blanched, squeezed, chopped, and doused with olive oil and lemon juice. Top with a handful of crumbled feta: you won't regret it.

 

2. Throw it into a tangy, garlicky pasta sauce.

James Beard Foundation's Taste America® Phoenix

 

In addition to Boston, our final weekend of James Beard Foundation's Taste America® was spent in Phoenix. On Friday we enjoyed a spectacular meal prepared by local James Beard Award winners and Taste America All-Star Suzanne Goin. We spent the next day at Sur La Table, watching cooking demonstrations by Goin and Check, Please! Arizona's Robert McGrath, and also tasted samples from local artisans Steve's Wonder Mustard, Laura Gourmet, Tracy Dempsey Originals, and the Mix Up Bar.
