On yesterday's episode of Taste Matters, JBF's Mitchell Davis welcomed Anya Von Bremzen, food writer, author, and contributing editor at Travel + Leisure magazine. The pair discussed her latest book, Mastering the Art of Soviet Cooking: A Memoir of Food and Longing, which tells the story of life in the vanished empire known as the U.S.S.R. and how every edible morsel was packed with emotional and political meaning. James Beard Foundation's Taste America®

 

The second weekend of James Beard Foundation's Taste America® is in the books! Last Friday our team headed to our nation's capital, where we enjoyed a spectacular meal prepared by local James Beard Award winners and other top D.C.-area chefs. On Saturday we went to Sur la Table to see cooking demonstrations by Taste America All-Star Sean Brock and dumpling maker extraordinaire Scott Drewno of the Source.

 

We would like to extend our sincerest thanks to all our Washington, D.C. participants! And don't forget: Taste America is stopping in plenty of other cities soon.

Recipe: Bay Scallop Ceviche with Spiced Pumpkin Seeds and Asian Pear

Recipe for scallop ceviche with pumpkin seeds and Asian pear, adapted by the James Beard Foundation

 

Though scorching summer days have mercifully relented for the year, that doesn't mean you can't keep enjoying ceviche: the makes-itself convenience of this Latin American dish will serve you well any time.

 

Lately we've been digging this thoroughly Asian-focused ceviche from Jeremy Ford and Dean James Max of Fort Lauderdale's 3030 Ocean. They let bay scallops wallow in a bath of citron vinegar and lime and yuzu juices, then toss the "cooked" seafood with a complex confetti of diced Asian pears, toasted pumpkin seeds, sesame seeds, cilantro, and togarashi, a Japanese seven-spice blend.

Taste America Local Dish Challenge: Current Standings

The James Beard Foundation's Taste America® Local Dish Challenge

It's time for another Local Dish standings update! Chicago has broken away from the pack, but there's still a month left for you to help your town take over the top.

 

A Local Dish refresher: order a "Taste America Local Dish" at one of the contest's participating restaurants, snap it on your phone and upload it to Instagram, tagging your image with #JBFTasteAmerica and the suggested hashtag for your city. After the promotion ends on October 31, the city with the most uploads will receive $10,000 or 10 percent of funds raised nationally, whichever amount is higher, in the form of a donation to a local food charity.

 

We'll continue posting updated standings every week until the fundraiser ends.

In Memoriam: Marcella Hazan

In Memoriam: Marcella Hazan

 

The James Beard Foundation is deeply saddened by the loss of author and culinary legend Marcella Hazan. A native of Italy's Emilia-Romagna region, Hazan published several Italian cookbooks, and was widely considered to be one of the world's foremost authorities on authentic Italian cuisine and techniques. She is a multiple James Beard Book Award winner; her first book, The Classic Italian Cook Book: The Art of Italian Cooking and the Italian Art of Eating, was inducted into the JBF Cookbook Hall of Fame in 2000. She also received the Foundation's Lifetime Achievement award that same year. In 1986 she was named a "Who's Who of Food & Beverage."

 

In homage to Hazan's rich life and impact, we're sharing a profile of her written for the 2000 James Beard Awards program. It is presented below.

It's time for a look at this weekend's other James Beard Foundation’s Taste America® city: San Francisco!

 

On Friday, October 4, Taste America All-Star Wylie Dufresne will join an unrivaled crew of San Francisco chef talent, including a number of Beard Award winners (full lineup here), at the St. Regis Hotel. The team will collaborate on a menu of dishes inspired by a favorite James Beard story, inspiration, or dish. After dinner, guests will get to celebrate with the night's chefs at Sweet & Savory Indulgences: The After-Party, featuring bites from Outstanding Pastry Award winner Nicole Plue, Boulevard's Lisa Lu, and host chef Paul Piscopo.
