Fourth-generation chef and restaurateur Jimmy Bannos Jr. opened Chicago’s acclaimed wine-and-swine bar, the Purple Pig, to rave reviews at the tender age of 25. This winter, the 2014 JBF Rising Star Chef of the Year award winner satisfied eager Beard House diners with his luscious Mediterranean fare, which in his true nose-to-tail ethos, included everything from chicken feet to neck bone gravy. An equal-opportunity dining city, Charleston has everything from authentic Lowcountry fare to avant-garde tasting menus. Nate Whiting’s acclaimed cooking encompasses it all, offering creative, Southern-rooted dishes that “take diners on a delicious romp through modern cuisine,” as per the Charleston City Paper. At his recent Beard House dinner, Whiting did just that, serving an innovative tribute to Lowcountry flavors while incorporating whimsical and modern techniques. He riffed on fried chicken with buttermilk powder–dusted squab, and put his own spin on chicken and waffles with a poussin liver parfait served in miniature pizzelles. We all know and love the celebrity chef. Now it's time to meet a new culinary breed: the chef advocate.

 

The James Beard Foundation's Chefs Boot Camp for Policy and Change provides a unique opportunity for civically and politically minded chefs to become more effective leaders for food-system change. During thematic retreats around the country, participants attend advocacy and media workshops while learning about important issues, challenges, and opportunities in their industry.
