Scholarship Spotlight: Angel Torres

The recipient of the 2014 Chelsea Market Sunday Supper Scholarship, Angel Torres has just begun his freshman year at the Culinary Institute of America in Hyde Park, where he plans to pursue a degree in baking and pastry arts. Inspired by years of traditional Mexican baking in his grandfather’s home and business, Angel hopes to continue the family love of pastry by one day becoming a chocolatier.

“My whole life I’ve always been fascinated by all the different ways chocolate can be made and manipulated. I also want to learn how to make sugar decorations and sculptures. So far my plans after college are to travel Europe for a few years, and potentially work in countries that specialize in chocolate for a year or two each. The Chelsea Market Sunday Supper Scholarship is a life-changer, and allows me to attend my dream school.”

Scholarships: Announcing the Miljenko "Mike" Grgich's American Dream Scholarship

The James Beard Foundation has launched the Miljenko

Since 1991, the James Beard Foundation has awarded more than $5 million in financial aid to students pursuing careers in the culinary arts. Last month, at a celebration at Grgich Hills Estate in Rutherford, California, we welcomed Miljenko “Mike” Grgich to our roster of JBF scholarship sponsors. A Croatian immigrant who fled Communist rule, Grgich founded his eponymous winery in 1977, and was inducted into the Vintners Hall of Fame in 2008. In a partnership with the James Beard Foundation, the Estate has established the Miljenko "Mike" Grgich's American Dream Scholarship, which will be awarded to a student in wine studies. James Beard Foundation Scholarship Spotlight: Matthew F. Johnson

The recipient of the 2013 Elkes Family Scholarship, Matthew F. Johnson is a student at the Culinary Institute of America in Hyde Park, where he has spent his freshman year studying Culinary Fundamentals, Meat Fabrication, and Modern Banquet Cookery, among other subjects. Hailing from "meat-and-potatoes land," Matthew has discovered a passion for seafood, and he is about to embark on an externship in Seattle. (He also confesses that fish has taken up the bulk of his meal plan on campus.)

"The sense of security this scholarship has given me has allowed me to focus on my education, and it gives me confidence to keep pursuing my interests in this challenging field," Matthew told us in an email. "It’s also a cool thing to say that the James Beard Foundation has my back!"

As you can see in the below video, Matthew is also a budding motivational speaker.... Read more >

Scholarship Spotlight: Casco Bay Dreamin'

Paul C. Reilly is the chef and owner of Beast + Bottle in Denver. He was a recipient of the 2013 Jean-Louis Palladin Professional Work/Study grant, which he used to study sustainable fishing at Browne Trading Company in Portland, Maine.

As I pulled my white Ford Fiesta rental into the parking garage and stuck my boots out, there it was. It penetrated my nostrils and would continue to do so for the next five days. Salt, but not just the smell of salt, it was the feel of salt, the taste of salt. Mixed with seaweed and mud, it was the scent of Casco Bay. Not all ocean water smells like this. It has to be real cold water. It has to be the North Atlantic.

I’d come to learn over the next week that that scent holds a story all its own. It’s a story of history and tradition; the story of Maine as told to me by the people who work its boats and docks. I was lucky that... Read more >

Scholarship Spotlight: Ann Mah, Author

Ann Mah author and James Beard Foundation scholarship winner

Ann Mah has been interested in food since the age of five, when she climbed on the counter to watch her father chop garlic. After graduating from UCLA, she moved to New York to pursue her other love—books—eventually becoming an assistant editor at Viking Penguin. And because of the JBF Scholarship Program, she was able to fuse her two passions into a fulfilling career.

In 2005, Ann received a James Beard Foundation culinary scholarship to study in Bologna, Italy. "The experience deepened my knowledge of Italian cuisine," she told us. "It was my first real introduction to classic Italian food, to the dedicated producers preserving traditional methods, from the three generations of women aging balsamic vinegar in their attic, to the seventy-year-old pastamaker effortlessly rolling out a lump of dough into sheets of lasgana so silky and fine you could read a newspaper...
