A protégé of JBF Award winner Dan Barber, Chris DiMinno has made a name for himself on the hot Portland food scene with Clyde Common, his ultracool European-style gastropub. (The recipe calls for a few ramp leaves, but don't worry if the allium's season has ended in your neck of the woods—the dish is just as satisfying without them.)
