Eye Candy: Summer Garden Lettuce Salad

Alice Waters's Summer Garden Lettuce Salad in the JBF Vegetables app

If there's anyone who knows vegetables, it's legendary chef, author, activist, and restaurateur Alice Waters. The pioneer of California cuisine shared her Summer Garden Lettuce Salad (pictured above) with us for our brand new recipe app, JBF Vegetables, which features mouthwatering vegetable recipes created by JBF Outstanding Chef award winners. Waters's simple yet vibrant salad calls for a mix of greens, radishes, and fresh herbs—the perfect dish to showcase that succulent summer produce before the season ends.

It's Easy Eating Green

Colcannon

In honor of St. Patrick's Day and our fervent hope that one day it might actually be spring, we've put together a roundup of recipes featuring some of our favorite verdant ingredients.

Wilted Arugula with Anchovy and Garlic Dressing

A takeoff on traditional Piemontese bagna cauda, this flavorful warm vinaigrette is also good on bitter greens such as escarole, frisée, or dandelions.

Puff Pastry Samosas with Green Peas

To save time, this recipe uses puff pastry dough instead of traditional samosa dough. Serve with green chutney (of course).

Attended by nearly 100 freshly minted Greens members and other special guests, this kick-off event featured savory and sweet bites by Andaz chef Victor Cruz, as well as charcuterie, local cheeses, and freshly shucked oysters. Guests also enjoyed Punzoné Vodka and Arvero Limoncello cocktails, Stella Artois beers, Vias Imports wines, and music courtesy of El Media Group. A selection of photos from the party are below.

Recipe Roundup: Leafy Greens

Erbazzone Torta with Braised Greens, Prosciutto Cotto, and Eggs

When the lack of new offerings at the farmers' market gets us down this time of year, we turn to leafy greens. The trick is to move beyond a simple sauté: try greens puréed into creamy soups, tossed into a lemony salad, or braised and stuffed into a hearty Italian tart.

Kale Salad with Pecorino and Hazelnuts

Kale, you may have gone mainstream, but we're still not over you. We could eat this nutty, crunchy, kale-y salad every day.

Cream of Spinach Soup

Lunch: It's Not Just for Kids

grown-up lunch recipes, curated by the James Beard Foundation

It’s back-to-school time, but you don’t have to be a kid to appreciate a good brown-bag lunch. Here are some decidedly grown-up meals we’d trade for any day:

Stilton Ploughman's Lunch with Port-Poached Pear Relish [JBF]

Like a Lunchables package...except with Stilton and a spicy relish of Comice pears poached in Port. To brown-bag it, choose a country loaf or a hunk of ciabatta in place of the baguette and pack the relish in a separate container.

Miso-Marinated Pork Bento [Just Bento]

Who wouldn't love sitting down to a lovely bento box filled with miso-marinated pork, Japanese omelet, sautéed greens, and brown rice? Carrot and zucchini flower cut-outs are strictly optional, but we think they... Read more >
