Culinary Challenge: Don't Let Those Green Peppers Go to Waste!

For several weeks each summer, we find ourselves with a crisper drawer packed with green peppers. Bell peppers, Cubanelles, long greens: we get an assortment each week from our CSA, which we promptly toss into the fridge to languish while we wait for inspiration to strike.
Though they have their fervent fans, green peppers are more often dismissed (as bitter and under-ripe) or even maligned (food writer Michael Ruhlman once referred to them on his blog as "the earth's most lamentable vegetable"). For those of us whose feelings on the matter are slightly less impassioned, green peppers can still be a culinary challenge—there are only so many stuffed peppers one family can eat. Market Haul: After Apple-Picking Edition

Apple picking is an eagerly anticipated autumn ritual. Crisp fall air, cider donuts, hayrides, a bright wagon overflowing with apples that we are sure we will put to delicious use—sometimes it’s easy to get a little carried away. Once home with our invariably enormous haul, we begin to cook with the best of intentions. But after baking a pie or two and making a couple batches of applesauce without seeing a noticeable dent in the apple stores, panic can begin to set in. What’s an overly ambitious apple picker to do? Here are a few ideas.

Recipe: Champagne Jelly with Golden Raspberries
While we're always game to kick off a meal with a glass of Champagne, we also love the idea of letting some bubbly spill into the dessert course. In this ethereal treat from chefs Scott Crawford and Steven Greene, Champagne is set into a shimmery, pearl-toned gelée, then garnished with a dab of crème fraîche and golden raspberries, which are milder in flavor than their red cousins. Wine Wisdom: Make Your Own Wine Jelly
This column usually features a Q&A with one of our favorite award–winning wine experts, but for our DIY issue, we turned to JBF associate editor Anna Mowry, who makes and jars her own gem-toned wine jellies. Follow this simple recipe, adapted from Canning for a New Generation by Liana Krissoff, and you’ll have a unique spread that’s perfect on toast, with cheese, or even in your morning oatmeal. It also makes for a sweet Valentine’s Day gift.
Yield: 5 half-pint jars
Pectin stock:
3 pounds tart apples, such as
Granny Smith
6 cups water
Jelly:
One 750-milliliter bottle wine
3 cups pectin stock
2 1/4 cups sugar
1/4 cup lemon juice
To make the pectin stock, stem and quarter the apples. (Do not peel or remove the cores.) Place the apples and water in a large saucepan with a tight-fitting lid. Turn the heat to high and bring to a boil. Boil for 30–40 minutes. Strain the contents of the saucepan through a large chinois or fine-mesh sieve, but do not press down on the solids.
