To be honest, zucchini hasn't always been our favorite vegetable. It used to sit in our vegetable crisper, slowly getting spongy, while we worked our way through the other contents of our CSA box. But one day, this bright, flavorful salad totally turned us around on the summer squash. And now we can't get enough of it--we pickle zucchini and throw it into grain salads, soak strips of zucchini in garlicky olive oil and grill them until crisp and slightly charred, and freeze bags of grated zucchini to use in Jessica Seinfeld-approved quick breads all year long. Recipes from the Best of the Best: Michel Richard's Lemon Chicken

We've long treasured the flavorful spark that citrus brings to cooking, and we've been adding flurries of zest and showers of juice to our food for as long we can remember. But this brilliant recipe from JBF Award winner Michel Richard, who won our Outstanding Chef Award in 2007, has introduced us to a commonly untapped form of citrus: pulp. Richard roasts whole lemons for two hours, which focuses their sweet and tart flavor. Then he finely chops the pulp and combines it with honey and a couple drops of Tabasco to make a rub for the chicken. The flavor is unforgettable, and we're already thinking of other ways to use this new form of seasoning. Get the recipe here.

Eye Candy: Cooking for Haiti
Eric Hara of the Oak Room served this lemon pavlova, lemon sorbet, and rose water syrup dessert at last week's Beard House benefit for Haiti. The dinner raised over $4,000 for the International Rescue Committee and its support of the country's earthquake victims.

Recipe: Lemon Cheese
Tangy and tart, this spreadable lemon-scented cheese is a great topping for crackers and toast. It also pairs nicely with beets or, as chef Kirsten Dixon prefers, a tomato–basil bisque.
