Clafouti, a classic French dessert from the Limousin region, is traditionally made with sour cherries, but this version becomes all-American with the addition of blueberries. A perennial favorite of James Beard himself, the thick batter bakes into a dreamy, custard-like cake with lightly crisped edges and bright notes of orange zest. This simple, deeply satisfying treat is welcomed year round—we subbed blueberries for cherries, but you can also use plums, nectarines, pears, apples, or any other fruit you have on hand. In the step-by-step video below, director of house programming Izabela Wojcik demonstrates how to whip up this delightful dessert in your own kitchen.
