We think it's safe to say that cauliflower is having its moment. From crispy fritters to a silky puréed base for seafood to a stand-alone vegetarian entrée, we're devouring the cruciferous edible in a myriad of delicious ways. Below, more of our favorite recipes to get the white-hot veg into your culinary repertoire: 

Cauliflower Soup with Curried Raisin Sauce and Crispy Brussels Sprouts
This elegant and complex soup from chef Lon Symensma uses vibrant ingredients from the Asian pantry, like coconut milk, miso, and galangal.

Pan-Roasted Cauliflower Steaks with Tomatoes and Capers

Chef Scott Romano uses a mixture of green, yellow, and purple cauliflower for a colorful presentation in this supremely satisfying dish.

Roasted Cauliflower Risotto
Judy Schad pairs cauliflower with Capriole Mont St. Francis, a delightfully stinky, washed-rind cheese, in this risotto. If you can't find it, just substitute another strong, semi-hard goat cheese.

Charred Cauliflower with Toasted Bread Crumbs, Cornichons, and Parsley
