  • Buckwheat Blini with Fennel-Cured Lake Superior Whitefish, North Dakota Paddlefish Caviar, Aquavit Crème Fraîche, and Dill Sprouts
  • Pear–Brown Butter Galette with Vanilla Bean–Rye Bourbon Whip
  • Smoked Veal Sweetbreads with Pineapple, Jalapeños, and Bacon
  • Foie Gras–Porcini Croquettes
  • Polenta Cakes with Pork Ragù
  • Duck Confit Spring Rolls
  • Masa Tortilla with Vegetables, Sour Cream, Lime, Chilies, and Cilantro
