Adam Hegsted grew up in the Spokane/Coeur d'Alene area of the Inland Northwest. His cuisine is based on seasonal ingredients from local producers.

What is your earliest food memory?
Tasting simple smoked salmon over cedar at an Indian village in Puget Sound. First time I discovered beautiful simplicity.

If you weren't a chef, what would you be?
A painter.

If you could cook James Beard one dish, what would it be?
Pan-fried oysters.

Describe your worst kitchen screw-up:
I once had to assemble a high end wedding cake out of grocery store cake because it was not communicated to us that we needed a cake. It wasn't necessarily a screw up, but it was not my finest hour.
