Our recently published book, The James Beard Foundation's Best of the Best: A 25th Anniversary Celebration of America's Outstanding Chefs, features delicious, signature recipes from every winner of the Foundation's Outstanding Chef award through 2010. Not surprisingly, the chefs ended up giving us so many fantastic recipes that we weren't able to publish all of them. The following are some of our favorite dishes that didn't make it into the book.
