Southwestern Spring Farm Dinner, 7:00 P.M. 
Dustin Christofolo, Quiessence at the Farm at South Mountain, Phoenix

 
Tonight Dustin Christofolo journeys to the Beard House for a springtime feast. Known for his American farm fare that hints at his classic Italian training, chef Christofolo highlights the rich Southwestern bounty and outstanding wines that have made Quiessence an enchanting Phoenix dining destination. Get a taste of Arizona terroir with dishes like Wagyu Beef Carpaccio with Fried Purple Artichokes, Shaved Parmesan, and Nasturtium; Arizona Duroc Pork Belly with Maple Mascarpone, Tart Cherries, Portobello Mushrooms, Mint, Gastrique, and Almonds; and Potato Gnocchi with Heritage Turkey Confit, Dehydrated Campari Tomatoes, Sweet Corn, Espelette Pepper, and Squash Blossoms.

Showcasing the versatile qualities of this spirit, Vignola will lead diners on a tour of culinary pairings by way of Strip House’s signature style, featuring umami-packed plates like Baked Montauk Clams with ‘Nduja and Tarragon on Brioche; Smoked Fingerling Potatoes with Uni and Mangalitsa Lardo; and Charred New York Strip Steak with Spring Leeks, Crispy Potato Roulade, and Shiitake Jus.
