Maple Run, 7:00 P.M.
Christine Flynn, iQ Food Co., Toronto / Matt Jennings, Townsman, Boston / Mike Poiarkoff, Vinegar Hill House, Brooklyn, NY / Pastry Chef Brian Mercury, Harvest, Cambridge, MA / Pastry Chef Tracy Obolsky, Cookshop, NYC / Maple Producers Tina Hartell and Skye Chalmers, Bobo's Mountain Sugar, Weston, VT

Hailing from Canada and the Northeast, this syrup-savvy team is on a mission to prove that maple deserves a grander role in the kitchen than simply as a waffle topper. From maple producers to sap-devoted, scene-stealing toques like Matt Jennings and Christine Flynn (the recently unveiled woman behind Instagram sensation Jacques La Merde), tonight’s menu at the Beard House is bound to be an ambitious dinner that taps the savory and sweet potential of this beloved regional and seasonal ingredient. Push past pancakes with inspired dishes like Curried Lamb Turnovers with Chiles, Maple, Pickled Onions, and FennelBlack Pepper Gougéres with Maple and Goat Cheese; and Maple-Braised Beef Short Rib with Kimchi Stew. And to finish the night? A take on the classic baba au rhum that swaps in waffle batter as the base and is topped with a maple meringue that proudly states that this catch-all ingredient is anything but pedestrian.
