Winter Fancy

Enlightened Eaters

As an activist and co-founder of the Restaurant Opportunities Center, Saru Jayaraman writes the back-of-house story of American dining in her latest book, Behind the Kitchen Door. Urging us to look beyond the food on our plates to the hands that serve and prepare it, Saru advocates for the improvement of working conditions in an industry often plagued by exploitation and discrimination, with hope of a dining experience that is positive for everyone.

After rising through the ranks at Bouley and Per Se, David Santos gained his own cult following with his private supper club, Um Segredo, which he hosted from his apartment. Now at the helm of New York City's Louro, he serves up modern American cuisine that draws flavor from his Portuguese roots.

Celebrity Chef Tour: Kohala Coast, HI

The Celebrity Chef Tour began in 2004 as a way to bring the unique experience of dining at New York City’s historic James Beard House to cities around the country.
