Here’s a taste of what’s on tap today at the Beard House.

 

The Maude Experience, 7:00 P.M.
Curtis Stone, Maude, Beverly Hills, CA; and Gwen, Los Angeles

Curtis Stone played host on Top Chef Masters, but this Aussie import is also the mastermind behind the chic Maude, where monthly rotating menus highlight a single star ingredient. Tonight Stone will bring his bottomless creativity and deft touch to the Beard House for a dinner exalting the summer plum, featuring plates like Plum Gazpacho with Late-Summer Herbs and Flowers; Grilled Prawns with Yellow Plums, Sweet Corn, Okra, and Nasturtium; and Roasted Pheasant with Plum Wine Sauce, Lily Bulbs, Amaranth, and Plum Wood–Smoked Prune and Pheasant Gyoza in Consommé.

Fennel Cookies with Pickled Plums and Melted Lardo

Plum Gazpacho with Late-Summer Herbs and Flowers

Raw Kampachi with Niçoise Olives, Sour Plums, and Assorted Basils

Tsukune Sausages with Plum Sauce, Sesame Seeds, and Thai Basil

Grilled Prawns with Yellow Plums, Sweet Corn, Okra, and Nasturtium 

Dinner

Roasted Beetroot Salad with Plums, Anise Hyssop, and Hazelnut Milk

Warm Eel Parfait with Roasted Foie Gras and Caramelized Plums

Red Sea Bream with Crispy Artichokes, Sea Lettuces, and Plum Wine Sauce

Roasted Pheasant with Plum Wine Sauce, Lily Bulbs, Amaranth, and Plum Wood–Smoked Prune and Pheasant Gyoza in Consommé 

Chocolate Diplomate with Mirabelle Plums, Caramelized Puff Pastry, and Shiso Ice Cream

A selection of fine wines will be served with this dinner.
