Punxsutawney Phil says there are just about three more weeks of winter (if you subscribe to this certain folklore), and despite the coziness that freezing temperatures bring, we're ready to jump into the next season. With that in mind, we wanted a recipe that not only warms our bones, but hints at the more temperate weather that awaits us.
This golden beet soup by Kate Williams, chef at Detroit's Lady of the House (which recently nabbed a spot on our Best New Restaurant semfinalist list), fits the bill. It's creamy and soothing yet effortlessly light—a perfect antidote to our winter doldrums.
