Join us at the Beard House for our fourth annual Skuna Bay Pacific Salmon dinner featuring seasoned chefs from coast to coast. From smoked to seared and everything in between, this dinner will celebrate the beloved fish and explore the range of flavors that accentuate its boundless versatility.


  • Hors d’Oeuvres
    • Marinated Skuna Bay Salmon with Warm Cipriani rolls 
    • Skuna Bay Salmon Tataki with Wasabi Kizami and Tosazu Vinegar Sauce 
    • Skuna Bay Salmon Dumplings with Peanut–Piri Piri Sauce
    • Cured-and-Smoked Skuna Bay Salmon with Malted Barley Crackers and Pickled Onions 
    • Beet-Cured Skuna Bay Gravlax with Roe, Preserved Cauliflower, and Everything Bagel Spice on English Muffins
    • Skuna Bay Salmon Crudo with Pine Nut Emulsion, Sweet Fish Sauce, Serrano Chiles, and Radishes 
  • Dinner
    • Skuna Bay Salmon Scottato with White Baby Fennel Salad and Citrus Vinaigrette
    • Skuna Bay Salmon with Melted Leeks and Carrots, Carolina Gold Rice, and Sauce Beurre Rouge
    • Grilled Skuna Bay Salmon with Coconut Black Sticky Rice, Yu-Choy, Candied Seeds, and Pumpkin Purée 
    • Seared Skuna Bay Salmon with Endive Gratin and Dried Cherry Mustard 
    • Dill–Mustard Gnocchi with Smoked Skuna Bay Salmon, Celery Root, and Crème Fraîche
    • Sesame Seeds with Maple, Skuna Bay Salmon Roe, Creole Cream Cheese, and Sea Buckthorns
