Let’s class it up for this week’s Happy Hour. With a long workweek behind you and a sadly short weekend ahead, you deserve to treat yourself. Why not turn to the brightness and bubbles in 2016 Outstanding Bar Program Award winner Maison Premiere’s recipe for the Carnival Spark?

This decadent drink showcases some seriously premium ingredients. It starts with Champagne, lemon cordial, lime juice, barrel-aged gin, crème de violette, and a little Chinato—an Italian aromatized wine that employs cinchona bark for a touch of bitterness. Shake up that luxurious mélange and strain it over a Collins glass filled with crushed ice. To finish, float some more of that gorgeously hued crème de violette on top and garnish with a sprig of chamomile. Get the recipe and start your weekend in high style.
