Beefsteak Tomato and Onion Salad

"A pleasant, simple salad or first course typical of steakhouses throughout the East and to a lesser degree in the West. It consists of thickish slices of ripe beefsteak tomatoes and good sweet onions, usually eaten with salt and freshly ground pepper and sometimes with oil and vinegar, served in cruets. Excellent with broiled foods." –James Beard

Ingredients

  • Beefsteak tomatoes
  • Sweet onions
  • Olive oil
  • Lemon juice, vinegar, or lime juice

Method

For an exquisite salad in summer, combine slices of freshly gathered ripe tomatoes—red and sweet to the taste—and young onions from the garden or sweet Italian onions. Toss together with fine olive oil and a touch of lemon juice, vinegar, or lime juice.
