Duck Meat Loaf

Ryan Angulo puts a sophisticated spin on meat loaf by using succulent duck
breast, sweet raisins, and grassy herbs.

Ingredients

  • Olive oil as needed
  • 1/2 cup finely chopped onion
  • 1 pound ground duck
  • 4 ounces ground duck fat
  • 1/2 cup bread crumbs
  • 1/4 cup chopped raisins
  • 2 tablespoons chopped parsley
  • 1 tablespoon chopped thyme
  • 1 1/2 teaspoons salt
  • 1 egg

Method

Preheat the oven to 400ºF. Heat some olive oil in a medium saucepan. Sauté the onions until translucent, about 5 minutes. Set aside.

Put the remaining ingredients in a large mixing bowl and mix with your hands until well combined, making sure that the fat is evenly distributed. Form the mixture into 4 patties and transfer to a plate. (A ring mold will help you form even patties.)

Heat a heavy cast-iron saucepan over medium heat. Sear the patties on both sides, no more than a minute per side. Transfer to a roasting pan and cook in the oven for 15 to 20 minutes. Serve.
