Eastern Carolina Barbecue Sauce

David Calkins

Old Glory Restaurant, Washington D.C.

Surprisingly, it didn’t take much for David Calkins, formerly of Old Glory Restaurant in Washington, D.C., to give up one of his cherished barbecue sauce recipes. Those who prefer their 'cue less spicy can decrease the amount of crushed red pepper in the recipe.

Yield

One gallon

Ingredients

  • 1 gallon apple cider vinegar
  • 3/4 cup molasses
  • 1/2 cup light corn syrup
  • 3/4 cup kosher salt
  • 1/3 cup crushed red pepper
  • 2 teaspoons cayenne pepper
  • 1 teaspoon cracked black pepper

Method

In a large pot, combine all the ingredients and simmer over medium heat, stirring frequently for 5 minutes. Remove from heat and cool, before storing in the refrigerator.
