Ingredients

Passion Fruit Stock

  • 250 grams passion fruit purée
  • 45 grams water

Cranberry Stock

  • 250 grams cranberries
  • 200 grams sugar
  • 250 grams water

Navel Orange Juice

  • 2 navel oranges

Lime Juice

  • 3 limes

To Assemble

  • 1 3/4 ounces (52.5 ml) cranberry stock
  • 1 ounce (30 ml) passion fruit stock
  • 1 ounce (30 ml) navel orange juice
  • 1/2 ounce (15 ml) lime juice
  • 3/4 ounce (22.5 ml) Dos Maderas 5+3 Aged Rum
  • 3/4 ounce (22.5 ml) Banks 5 Island Rum
  • 3/4 ounce (22.5 ml) Smith & Cross Rum

Method

Make the passion fruit stock: combine the passion fruit purée and water in bowl, stirring to mix thoroughly. Strain [the mixture] through a fine-mesh sieve. Transfer to a glass bottle. Reserve in the refrigerator.

Make the cranberry stock: in a medium saucepan, combine the cranberries, sugar, and water. Bring the mixture to boil over medium heat. Reduce the heat to low and simmer for 20 minutes. Remove from the heat and let cool completely. Strain [the mixture] through a fine-mesh sieve. Transfer to a glass bottle. Reserve in the refrigerator.

Juice the oranges and then strain the juice through a fine-mesh sieve. Transfer to a glass bottle. Reserve in the refrigerator.

Juice the limes and then strain the juice through a fine-mesh sieve. Transfer to a glass bottle. Reserve in the refrigerator.

To assemble: using a cocktail layering device, add the ingredients into tall, slender carafe in the following order: cranberry stock, passion fruit stock, navel orange juice, lime juice, Dos Maderas 5+3 Aged Rum, Banks 5 Island Rum, and Smith & Cross Rum, allowing each layer to settle and stabilize before adding the next. Serve alongside a glass of crushed ice with a straw. Garnish with a paper cocktail umbrella.
