Kevin Cottle, Fire at the Ridge at Powder Ridge Mountain Park and Resort, Middlefield, CT
After competing on Hell’s Kitchen, chef Kevin Cottle took on another ambitious venture, purchasing a ski resort and opening the elegant Fire at the Ridge. Tonight this blazing-hot chef will light up the Beard House, paying homage to his New England roots through a refined expression of Connecticut’s lush summer bounty, such as Pop Rock–Foie Gras Truffles; Caramelized Scallops with Braised Pork Belly, Fennel–Apple Purée, and Lemongrass Sauce; and Butter-Poached Lobster with Summer Corn Pudding, Steamed Littleneck Clam, and Potatoes.
