The traditional Persian appetizer, made with thick yogurt and veggies, is a delicious way to get your greens and protein (hello, yogurt!) with minimal effort.

Duguid strains plain yogurt until it's super-thick and extra creamy, swirls in lightly sautéed spinach, and tops it off with caramelized onions, fragrant saffron water, and toasted walnuts. Served with some pita and crudité, this appetizer is a perfect companion to your beloved hummus spread—and might even become your new favorite dip.
