Dive into Nikkei cuisine—the intersection of Peruvian ingredients and Japanese technique—through the lens of two of New York City’s most influential Peruvian chefs: José Luis Chávez, co-founder of Mission Ceviche, and James Beard Award nominee® Erik Ramirez of Llama Inn and Papa San.
Their boundary-pushing collaborative dinner will spotlight modern Peruvian cuisine, coastal ingredients, and global influences while drawing inspiration from their respective cultural roots and experiences. Chef José Luis Chávez is a Venezuelan-born, Peruvian-trained chef whose expanding portfolio includes Nikkei and Latin American concepts across the U.S. and Mexico. Chef Erik Ramirez is of Peruvian and Japanese heritage and is the co-founder of The Llama Group, with restaurants in Brooklyn, London, and Madrid.

Reservation Policy:
All reservations are non-refundable and must be made in advance. Should the event be cancelled due to any unforeseen circumstances, JBF will offer a range of options, including ticket exchanges, the option to donate tickets, or a full refund. Terms
Tickets to events held at Platform at Pier 57 by the James Beard Foundation cover the cost of food, education and a unique dining experience. Meals are prepared by culinary masters from all regions of the United States and around the world. Unless otherwise stated, alcoholic beverages are provided on a complimentary basis and are not included in the ticket price.
