"The impetus for the Absent Stars was to take a classic tiki drink and work with some of the same flavors while adding elements to significantly dry the drink out and bring out big white grapefruit notes. The addition of Campari brought a necessary bitter that pulls out the tropical passion fruit notes and the Apry helps reinforce the passion fruit by giving it the sort of depth that you can only get from a stone fruit liqueur." —​Nick Detrich


  • 1 ounce Campari
  • 1 ounce La Favorite Blanc Rhum Agricole
  • 3/4 ounce lemon juice
  • 1/2 ounce passion fruit syrup
  • 1/2 ounce Marie Brizard Apry or Rothman and Winter Orchard Apricot (a sweet apricot liqueur)
  • 5 drops saline
  • 10 drops Bittermens Hopped Grapefruit Bitters
  • Orange twist for garnish


In a cocktail shaker filled with ice, combine all ingredients and shake 20 times. Strain the cocktail into a double Old Fashioned glass filled with ice. Twist the orange peel into a spiral (this brings out the essential oils), rub over the rim of the glass, and place on top of the beverage.
