Baked Pears with Cranberry–Apple Reduction

Method

This aromatic dessert is a great use for bountiful winter pears.

  • 4 Bosc pears
  • 1 cup apple juice
  • 1 cup cranberry juice
  • 1 cinnamon stick
  • 6–8 cloves

Preheat the oven to 400ºF. Cut a thin slice off the bottom of each pear. Pour the apple juice and cranberry juice into a medium roasting pan. Add the cinnamon stick and cloves, then arrange the pears upright in the pan. Roast, basting every 15 minutes, until tender, brown, and puckered, about 45 minutes. Remove from the oven and transfer the pears to serving plates. Drizzle the leftover roasting liquid over the pears. Serve.
