Chicken Adobo

Ingredients

  • Chicken Adobo:
  • 1 cup low-sodium soy sauce
  • 3/4 cup rice wine vinegar
  • 1 tablespoon grated fresh ginger
  • 3 garlic cloves, smashed
  • 1 yellow onion, coarsely chopped
  • 3 bay leaves
  • 2 tablespoons lime juice
  • 2 teaspoons black pepper
  • 1/4 cup brown sugar
  • 2 tablespoons cilantro leaves
  • 2 pounds boneless, skinless, organic chicken thighs
  • Garlic-Ginger Brown Rice:
  • 1 cup brown rice
  • 1 tablespoon grated fresh ginger
  • 1 bay leaf
  • 1 1/4 cups water
  • 2 teaspoon salt
  • 1 teaspoon black pepper
  • Long Beans:
  • Long beans or green beans
  • Minced garlic
  • Lime juice
  • Salt
  • Pepper

Method

Make the chicken adobo: put all ingredients except chicken in the bottom of a thick-bottomed pot. Place chicken on top of ingredients. Cover and simmer for 1 hour. Then garnish with fresh cilantro leaves.

Make the garlic-ginger brown rice: put all ingredients in a rice cooker and cook until ready.

Make the long beans: toss all ingredients together and steam for 8 to 12 minutes.
