- 1 1⁄4 cups mayonnaise
- 1⁄2 cup sour cream
- 1⁄4 cup plus 2 tablespoons granulated sugar
- 1 tablespoon white vinegar
- 2 teaspoons salt
- 1 small head cabbage, shredded (about 2 pounds)
- 1⁄2 red bell pepper, julienned
- 1⁄2 carrot, julienned
Whisk the mayonnaise, sour cream, sugar, vinegar, salt and 1⁄4 cup water in a medium bowl.
In a large bowl, combine the mayonnaise mixture with the cabbage, red bell pepper, and carrot and stir to combine. The coleslaw can be made up to 1 day in advance and refrigerated.
About 6 cups
