"This cocktail was inspired by the famed Salt March of 1930, a peaceful protest led by Mahatma Gandhi against the British Salt Tax and British occupation of India. (Notice the choice of Dutch genever, as opposed to British gin.)" —Jill Cockson, proprietor of The Other Room


  • 1 ounce Boomsma Oude Genever Gin
  • 1 ounce Carpano Antica Formula Sweet Vermouth
  • 1 ounce Amaro Averna Liqueur
  • 2 dashes Hawaiian red salt solution, or a very small pinch of salt
  • Lemon twist for garnish


Make the saline solution: dissolve 1 part Hawaiian red salt into 3 parts filtered water. (Note: in lieu of the saline solution, a very, very small pinch of salt would suffice.)

Combine all of the ingredients in a mixing glass. Add ice and stir for 30 seconds, or until the desired dilution is achieved. Strain into cocktail coupe and serve with a lemon twist.
