Mango Pudding

This dish is classic dim sum fare in the city of Macau.


  • 2 cups water
  • 1 1/3 cups milk
  • 1 cup sugar
  • 2 tablespoons powdered gelatin
  • 1/2 cup heavy cream
  • 1 large mango, diced


Combine the water, milk, and sugar in a medium pot and bring to a boil. Remove from heat and whisk in the gelatin, whisking constantly to fully dissolve it. Stir in the cream and let the mixture cool for 10 minutes. Mix in the mango pieces. Pour the pudding into serving bowls or molds and chill in the refrigerator until completely set, about 6 hours.
