The Kimball House - Decatur, GA
This refreshing cocktail from 2016 JBF Outstanding Bar Program semifinalist, the Kimball House, pairs wonderfully with fresh oysters and raw seafood.
- 1 ounce white rhum auricle
- ¾ ounce freshly squeezed lime juice
- ½ ounce green chartreuse
- ½ ounce Jack Rudy Cocktail Co. Tonic Syrup
- ¼ ounce simple syrup
- Dry sparkling wine
Make the simple syrup: mix equal parts sugar and water in a bowl until sugar has dissolved.
Strain the lime juice in a bowl lined with a coffee filter.
Shake together all ingredients in a cocktail shaker filled with cubed ice. Strain into a chilled Champagne flute and top with a very dry sparkling wine.
