Teriyaki Marinade

James Beard recommended this recipe to use with a London broil, flank, or a skirt steak, but it can be used for a variety of meats.


  • 1/2 cup soy sauce
  • 1/2 cup sherry
  • 1/4 cup peanut oil
  • 1 to 2 cloves garlic, finely chopped
  • 1 teaspoon grated orange rind
  • 1 to 2 tablespoons grated fresh ginger


Combine ingredients together. Marinate meat for several hours, turning frequently, before you cook it.


Marinade for 2 to 3 pounds of meat
