World of Hyatt, proud host of JBF's 2017 Chef Jacket Presentation, treated the JBFA reception chefs to a special brunch at the Hyatt Regency Chicago. The menu included this refreshing mojito, sweetened with watermelon juice and agave nectar.
2 lime wedges
4 mint leaves
1 1/2 ounces Bacardi Superior White Rum
1/2 ounce lime juice
2 ounces watermelon juice
1/2 ounce agave nectar
Sprig of mint and lime wheel for garnish
Muddle the lime wedges and mint leaves in a cocktail shaker. Add the rum, lime juice, watermelon juice, and agave nectar. Shake well. Pour into a Champagne glass, then add ice and top with club soda. Garnish with the mint spring and lime wheel.
