Negroni Bianco

"The Negroni is my favorite cocktail and I like to have a version of it at each restaurant. As we were opening L'Apicio, I was tasting Cocchi Americano (a great Italian aperitivo that is clear in color) and it gave me the idea to try to create a white negroni. The traditional negroni is equal parts gin, red vermouth, and campari with an orange twist. I kept the gin and the twist (though made it extra long) but subbed out Cocchi for the Campari and white vermouth for the red. I also added hopped grapefruit bitters to replace some of the bitterness that was lost by removing the Campari."

Ingredients

1 ounce Cocchi Americano
1 ounce Dolin Blanc vermouth
1 ounce Martin Millers Gin 
Grapefruit bitters
Orange peel, for garnish

Method

Add all ingredients except the orange peel to a mixing glass.

Fill with ice. Stir for about 30 seconds.

Strain into a chilled cocktail glass and garnish with an extra long orange peel.
