Happy Hour: Pimm's Cup

Hilary Deutsch

July 14, 2016

Need a break from the wilting heat? Look no further than author and photographer Heidi Swanson’s effortlessly refreshing Pimm’s Cup. A quintessential thirst-quencher, this summery drink originated in England and gets its stateside roots from New Orleans. This variation, from Swanson's 2016 Beard Award–winning cookbook Near & Far, calls for muddled cucumbers and coriander seeds, a heavy dose of the gin-based Pimm’s, freshly squeezed lemon juice, and spicy ginger beer. A final flourish of seasonal plums, berries, lemons, and coriander sprigs garnishes the glass—and voilà, your favorite summer cocktail is complete! Thank us after you've cooled off. Get the recipe.
