Mix Up this Standby for a High-Class Happy Hour

The 2019 James Beard Media Award for Book of the Year went to Cocktail Codex, an exhaustive guide to masterful mixology fit for home bar enthusiasts and beverage pros alike. When it comes to assembling your happy hour playbook, authors Alex Day, Nick Fauchald, David Kaplan, and Devon Tarby insist on first perfecting the classics. We suggest starting with this recipe for the silver fizz, a timeless gin-based cocktail that employs an egg white for a rich texture and frothy head.

Start off with a dry shake (which you perfected last Happy Hour) of two ounces of Beefeater, an egg white, and equal parts lemon juice and simple syrup. As the authors explain, shaking the egg white breaks up its tightly packed proteins and allows them to trap air bubbles and aerate the finished product. After shaking the same ingredients again with ice, double strain it all over some seltzer and watch your friends marvel at the white foam that becomes the drink’s garnish.
