Founder-Led Tasting With Daisuke Nakajima and Curated Bites From Chef Koji of Odo East Village
This guided tasting—led by Daisuke Nakajima, founder of BŌKEN, a company dedicated to bringing distinctive, small-production Japanese sake to the United States while supporting historic breweries —explores what's actually in your glass, from how sake is brewed to the factors that shape its aroma, texture, and structure.
Alongside the pours, guests will experience a series of bites from Odo East Village, a seasonally driven kaiseki izakaya from the Odo team. Prepared by chef Koji, these pairings reveal just how well sake performs at the table, moving across dishes in ways that may surprise you..

All reservations are non-refundable and must be made in advance. Should the event be cancelled due to any unforeseen circumstances, JBF will offer a range of options, including ticket exchanges, the option to donate tickets, or a full refund. Tickets to events held at Platform at Pier 57 by the James Beard Foundation cover the cost of food, education, and a unique dining experience. Meals are prepared by culinary masters from all regions of the United States and around the world. Unless otherwise stated, alcoholic beverages are provided on a complimentary basis and are included in the ticket price. Gratuity, taxes, and fees are included in the ticket price.
