A Whole Animal Supper with Publican Quality Meats’ Head Butcher
Join Rob Levitt—renowned butcher, chef, and head of butchery at Chicago’s acclaimed The Publican and Publican Quality Meats—for a dinner that explores the full culinary potential of the pig. Levitt, a pioneer of whole animal butchery and longtime advocate for sustainable sourcing, brings over two decades of craftsmanship to the table with a snout-to-tail approach rooted in respect for the animal and the farmers who raise them. Guests will be able to view the hog breakdown and savor a thoughtfully prepared menu that showcases the rich variety of flavors, textures, and culinary traditions one pig can offer. The feast will be rounded out with seasonal vegetable dishes, responsibly sourced seafood, and handmade accompaniments that reflect Levitt’s ingredient-driven ethos.

All reservations are non-refundable and must be made in advance. Should the event be cancelled due to any unforeseen circumstances, JBF will offer a range of options, including ticket exchanges, the option to donate tickets, or a full refund.
