Caramelized Apple Clafoutis

Ingredients

  • 1 tablespoon butter
  • 2 apples, thinly sliced
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon
  • Butter as needed
  • 1 cup milk
  • 5 eggs
  • 3/4 cup flour
  • 1 teaspoon vanilla
  • Pinch nutmeg
  • Pinch salt

Method

Caramelize the apples: heat the butter in a sauté pan over medium heat. Add the sliced apples, sugar, and cinnamon. Cook until the apples are soft, about 7 to 10 minutes. Set aside.

Preheat the oven to 400° F. Grease a 9-inch pie pan with butter.

Make the batter: whisk together the milk, eggs, flour, vanilla, nutmeg and salt in a large bowl. Mix in the caramelized apples and pour the batter into the greased pan. 

Bake until golden brown and the middle of the clafoutis jiggles when gently shaken, about 30 minutes. Cut into slices and serve with ice cream.

One 9-inch clafoutis, 10 to 12 servings
