Scandinavian Cucumber Salad

"In summer, there's nothing quite as cool and refreshing as cucumber sandwiches, cucumber soup, or cucumber salads," wrote James Beard in Beard on Food, adding that this refreshing salad makes an excellent side dish for salmon, or as part of a summer luncheon buffet.
- 1/2 cup cider or white wine vinegar
- 2 tablespoons water
- 1/2 teaspoon salt
- 3 tablespoons sugar
- 1/8 teaspoon fresh dill
- 2 medium-sized cucumbers, sliced in very thin julienne strips
Make a sweet-sour dressing by combining vinegar, water, salt, sugar, and dill. Pour the dressing over the sliced cucumbers, cover with plastic wrap, and let stand for at least 3 hours.
Serve in the true Scandinavian style, in the marinating dressing.
