4 teaspoons peach juice
2 teaspoons lemon olive oil
Salt and pepper to taste
3 cups mixed greens
2 tablespoons crumbled Maytag blue cheese
2 tablespoons toasted pecans, chopped
2 tablespoons raisins or currants
1 peach, diced
Half of a peach, sliced, for garnish

A vinaigrette made with peach juice adds extra summery flair to this simple salad.
Yield: 4 servings
Method:
Mix the vinegar and the peach juice together in a small bowl. Whisk in the lemon olive oil. Season with salt and pepper to taste.
Combine the greens, blue cheese, pecans, raisins, and diced peaches in a large mixing bowl. Drizzle the vinaigrette over the salad; toss gently until the ingredients are evenly dispersed. Divide the salad among chilled salad plates. Garnish with peach slices.
