After earning his culinary chops at Clyde Common and Olympic Provisions, Jason Barwikowski now helms the kitchen at the Woodsman Tavern, a Portland eatery known for its European-inflected American fare sourced from local and artisanal purveyors. Complemented by the striking pairings chosen by wine director Carly Laws, this tantalizing menu pays homage to the rich terroir of the Pacific Northwest.

  • Hors d’Oeuvre
    • Pickled Bay Shrimp–Avocado Mousse
    • New Potato Confit with Green Garlic Aïoli 
    • Crispy Pork Rillettes 
    • English Pea Pâté with Pickled Ramps on Grilled Rye
  • Dinner
    • Farm Egg Soufflé with Creamed Morels, Brioche, and Red Sorrel
    • Asparagus Salad with Radishes, Hazelnuts, and Sheep’s Milk Cheese 
    • Poached Octopus and Beef Tongue with Peas, Mint, and Beef Broth
    • Fried Quail with Nettle Sauce, Carrot Dumplings, and Pickled Quail Egg
